Vegetable Crumble

This is real healthy comfort food and is a great way to use up any spare root veg you have hanging around. If I have a few rashers of bacon I add them with the onions but it is delicious with or without, so this is the vegetarian version!

Ingredients :

  • 2 carrots, chopped into cubes
  • ½ small celeriac or swede, chopped into cubes
  • 1 parsnip, chopped into cubes
  • 1 small sweet potato chopped into cubes
  • (I use whatever root veg I have, the more the better!)
  • 1 tbsp butter
  • 1 or 2 bay leaves
  • 4 spring onions (or one small onion)
  • 1 heaped tbsp plain flour (you can use gluten free if you want)
  • dollop or two natural yogurt/creme fraiche
  • 2 garlic cloves crushed
  • Sprinkle of nutmeg
  • For the crumble
  • 50g butter
  • 3½ oz plain flour (you can use gluten free if you want)
  • 25g ground almonds
  • 25g parmesan cheese, grated
  • Handful of porridge oats (gluten free if necessary)
  • ½ tsp finely chopped fresh rosemary

Instructions :

  1. Once I have made a dish by following the recipe I rarely make it the same again. With this recipe I use whatever I have in, if I have spinach or wild garlic, as I did the other day, I throw that in too at the end!
  2. Put all your root veg into a pan and just cover with boiling water (this water will make the sauce so don’t throw it away!) Let the veg boil until soft.
  3. In another pan melt the butter and cook the onion and bay leaf (add bacon if using!) when they are cooked through remove the bay leaves.
  4. Add the flour to form a paste and drain the veg water into the mix to make a sauce, keep stirring as it thickens.
  5. Add nutmeg, garlic and yogurt to the mix then pour everything into the pan with the drained veg.
  6. Dish into 4 individual pots.
  7. Pre-heat the oven to 190ºC while you make the crumble topping.
  8. Put all the crumble ingredients into a food processor and blitz, divide equally between your four pots.
  9. Cook for 20-25 mins until nicely bubbling.
