I love falafel but sometimes they can be a bit dry, these certainly aren’t and they are fab hot or cold so make a big batch for dinner and have them for lunch too.

Ingredients :

  • 700g sweet potatoes, about 2-3
  • 2 garlic cloves, crushed
  • 1 tsp ground cumin
  • 2 tsp ground coriander
  • ½ tsp chilli powder
  • handful coriander leaves if you have some to hand
  • juice ½ lemon
  • 100g gram flour (any flour will do)

Instructions :

  1. Bake the sweet potatoes with skins on until soft, about half an hour at 190ºC.
  2. Once they are cooked, squeeze the insides into a bowl and add all the other ingredients
  3. Mix well and then shape into approx 20 balls and place on an oiled baking tray.
  4. Pop into the already hot oven and bake for 15 mins at 200ºC then turn over and do the other side the same.
  5. These are great stuffed into a toasted pitta or wrap with a spread of hummus and a big pile of homemade coleslaw.
  6. Homemade coleslaw – grate a carrot then thinly slice some white or red cabbage and red or white onion, add some mayonnaise and hey presto it’s done. You can include, celeriac, thin slices of celery, radish, shredded lettuce whatever you find lurking in the fridge without a purpose will probably work if you can grate it!
