Ingredients :

  • 50g plain (or gluten free flour)
  • 2 eggs, seperated
  • 2 tbsps milk
  • 4 spring onions shredded
  • 50g beansprouts
  • 1 sweet potato peeled and shredded
  • For the dipping sauce
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1tsp dijon mustard
  • 1 tbsp tomato puree
  • 1 red chilli cut into thin slices
  • 1 tbsp sesame seeds
  • (Or just use a shop bought chilli dipping sauce for ease!)

Instructions :

  1. Mix the flour, egg yolks and milk together to make a smooth batter.
  2. Whisk the egg whites and fold into the batter then stir in the veg.
  3. in a frying pan heat a little oil then drop in about 4 – 5 spoonfuls of batter mix to make little pancakes.
  4. Cook until they start to bubble on top, about 5 minutes, then flip over and cook the other side.
  5. Serve with the dipping sauce and a salad.
