Nut roast always sounds to me like such a hippy meal but this is in no way hippyish, it is delicious, easy to make, very healthy and is great as leftovers for lunch the next day.

Ingredients :

  • 250g mixed nuts, brazils, cashews, hazelnuts and/or walnuts, blitzed in a food processor
  • 250g fresh tomatoes, chopped
  • 1 pepper, any colour, finely chopped
  • 1 large onion, finely chopped
  • 75g gluten free breadcrumbs (blitz 2 slices in a food processor)
  • 1 clove garlic, crushed
  • 1 tsp dried mixed herbs or 2 tsps fresh
  • 1 tbsp curry powder
  • 1 egg, beaten
  • 1 tbsp olive oil
  • seasoning, salt and pepper

Instructions :

  1. Heat the oil and cook the onion and pepper gently in a pan for about 10 mins.
  2. In a bowl, mix the breadcrumbs, nuts, garlic, curry powder, herbs and seasoning.
  3. Add the onions, peppers and tomatoes then the egg.
  4. Give everything a good stir then pack it firmly into a lined or generously oiled loaf tin and bake for 30 – 40 mins at 220°C.
  5. Serve with a salad.
