Ingredients :
- 50g plain (or gluten free flour)
- 2 eggs, seperated
- 2 tbsps milk
- 4 spring onions shredded
- 50g beansprouts
- 1 sweet potato peeled and shredded
- For the dipping sauce
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1tsp dijon mustard
- 1 tbsp tomato puree
- 1 red chilli cut into thin slices
- 1 tbsp sesame seeds
- (Or just use a shop bought chilli dipping sauce for ease!)
Instructions :
- Mix the flour, egg yolks and milk together to make a smooth batter.
- Whisk the egg whites and fold into the batter then stir in the veg.
- in a frying pan heat a little oil then drop in about 4 – 5 spoonfuls of batter mix to make little pancakes.
- Cook until they start to bubble on top, about 5 minutes, then flip over and cook the other side.
- Serve with the dipping sauce and a salad.
