I absolutely love soup in the winter, it is not only filling, warming and comforting it also provides me with a great nutritional hit and a perfect way to use up any stray veg I have that has no home to go to. But soup doesn’t have to be confined only to winter….
A couple of years ago I was invited out to a gorgeous hotel restaurant with some friends, as a thank you, and on the menu that evening was an in-between course of gazpacho. I instantly thought, ugh, how awful, I hate cold soup, but as it turned out it was the highlight of the meal for me, that’s not because the rest of the meal was mediocre, it was far from that, but because the soup was so amazingly tasty and refreshing….. That was it I was hooked.
Every year I grow loads of tomatoes and cucumbers in my greenhouse, I make a lot of tomato and basil soup which I love but on a really hot day my new favourite is to whiz up a fresh and gorgeous gazpacho, it takes minutes and with each mouthful you just feel so healthy and righteous it’s untrue.
I’ve since discovered a load more soups that need little or no cooking for the summer, they are fresh and vibrant and most importantly pack a huge nutritional punch.
So whether you think you like cold soup or not, give one of these recipes a go, like me you will probably never look back!
