I love fish and as it is so good for you I’ve been trying to find some new and interesting recipes to bring out the best of this amazing food. This is easy, tasty and filling. The couscous absorbs all the lovely flavours.

The All Important Fish Dish
Ingredients :
- 1 onion, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, crushed
- pinch chilli flakes, or to taste
- 2 large tomatoes, diced (could use tinned tomatoes)
- 125ml white wine ( used red as I only had red and it was fine!)
- 400ml vegetable stock
- 50g wholemeal, couscous
- 4 white fish fillets, sustainably sourced of course
- zest of half a lemon
- chopped fresh parsley
Instructions :
- Fry onion, celery, garlic and chilli in a little oil for a few minutes,
- Add the tomatoes, wine and stock and bring to the boil.
- Add couscous. turn down to a simmer.
- Add fish, cover and cook for about 10 mins.
- Serve sprinkled with zest and parsley.
- A big green salad works well with this or some steamed veg.
