This is a really nutritious soup and if you’re lucky enough to have a garden you should have an abundance of nettles somewhere free for the picking. Only cut the tops, up to the first 4-6 leaves, don’t forget your gloves and stay away from dog roaming areas. Spring and autumn are the best times to harvest when the nettles are young, don’t pick once they have started to flower.
Give them a wash and they are ready to use.
For this recipe I use my basic all round soup recipe but you can add carrot, leek, celery whatever you want to the pot, I like it simple so here goes….

Ingredients :
- 1 tbsp olive oil
- 1 onion, chopped
- 1 or 2 garlic cloves, crushed
- 1 large potato, chopped
- 2 good (gloved) handfuls of washed nettles
- 1 pint chicken or veg stock (check for gluten and dairy)
- Salt and pepper to taste if required
Instructions :
- Fry your chopped onion in the olive oil until it has softened.
- Add the potato and cook for a couple of minutes before adding the stock and the garlic.
- Bring to the boil and simmer until potato is tender.
- Add nettles for the last minute to wilt.
- Add seasoning if required then buzz in the liquidiser.
- Enjoy with a swirl of creme fraiche or yoghurt on the top if not dairy free.
