I believe we would all benefit from eating less gluten. In my ‘Are You a Bit Stuck Up?’ post I explain why, but briefly here, gluten is basically a glue like substance that can be quite difficult to digest. It is found in bread, cakes, cereal, biscuits etc, etc. And whilst not all of us are actually gluten intolerant, eating too much can create a very sluggish digestive system resulting in gas, constipation and all number of undesirable side affects. Long term it has been known to cause inflammation throughout the body, which can create a myriad of nasty diseases and disorders in later life.
If you think about it, a typical British/American day starts with cereal or toast, elevensies of cake, biscuits, pastries cereal bars etc. A sandwich or something similar for lunch, more cake or biscuits mid afternoon and for dinner often pasta or pies. When you look at it like that, your digestive system has a lot of gluten to contend with, it’s just getting it’s head around one load and another load is dumped in, not good.
Personally I find breakfast is the hardest to do ‘gluten free,’ it’s just so easy to grab a slice of toast or a bowl of cereal, so here are my 6 favourite gluten and dairy free breakfasts to get your day off to a great, healthy start without overloading your digestive system.
Overnight oats
This is perfect if you have a few minutes the night before but are rushed in the morning, it is totally flexible so just add in what you have to hand. See recipe
Banana Pancake
This is not a pancake in the true sense as it is just one beaten egg and one mashed banana mixed together and fried, it is probably more like an omelette but whatever you want to call it, it is absolutely delicious. See recipe
Baked Mushrooms, Tomato and Egg
This is quicker than you think and is a lovely wholesome breakfast to get your day off to a cracking start. Pop it in the oven when you’re getting dressed. See recipe
Really Nutty Granola
This is a beautiful crunchy breakfast granola that can be made in advance and stored in an airtight container, it is perfect served with some fresh fruit. It has a slightly sweet but also savoury flavour, which is absolutely gorgeous. See recipe
Home-made Gluten Free Bread
This bread is about the best home made gluten free bread I have come across, it is very easy to make and always comes out beautifully. It will last a few days or can be sliced and frozen until needed. Spread with a layer of nut butter and a sliced banana or a dairy free spread and a sprinkling of cinnamon. See recipe
Mexican Scrambled Eggs
Eggs are a great start to any day and with the added ingredients in these Mexican Scrambled Eggs you will really give your digestive system a kick start. It is so quick and easy to make and will definitely keep you going until lunchtime, serve on a slice of the gluten free bread or eat on their own. See recipe
Make sure you wash your hands well though after chopping chilli, Don’t do what I did and put your contact lenses in with chilli on my fingers…. Ouch!

*Oats contain a different type of gluten that most people are less sensitive to, if you are concerned, pick up some Gluten Free Oats instead.
