Little Energy Bites

Gluten & Dairy Free

These little bites are incredible, so easy to whiz up and great to grab when you just need that little boost. If you are not a coconut fan forget it or use a non aroma coconut oil for the benefit without the taste!

You could probably try pretty much any combination of dried fruit for this as long as they blend, so if you have got something in the cupboard that needs using up, give it a try, how wrong can it go?!

Serves :

12 approx

Ingredients :

  • 50g soft dried apricots
  • 100g soft dried dates
  • 50g soft dried prunes
  • 2 tsp coconut oil
  • 1 tbsp toasted sesame seed

Instructions :

  1. Put all the dried fruit into a food processor and blitz until it all comes together.
  2. Pop it into a bowl and using your fingers work in the coconut oil (for those who don’t know coconut oil, it comes in a solid form but melts as you work with it. It makes for a lovely body oil too!) Anyway I digress. Once the oil is melted and mixed in thoroughly make small bite sized rounds and coat in the sesame seeds. They will keep in an airtight container for a couple of weeks but I doubt they will be around that long!
