Ingredients :

  • 2 tsp coriander seeds
  • ½ tsp cumin seeds
  • 1 dried red chilli
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • small piece of root ginger, grated (I keep some in the freezer!)
  • 2 cloves garlic, crushed
  • ½ tsp turmeric
  • 400ml can coconut milk
  • 1 tsp tamarind paste
  • 1-2 green chillies, finely sliced (optional)
  • 4 pieces of sustainably sourced white fish such as haddock, cod, hake or pollock

Instructions :

  1. If you don’t have coriander and cumin seeds or are in a hurry just use dried and lower the amount slightly.
  2. If you do, grind them in a pestle and mortar with the red chilli.
  3. Heat the oil and cook the onion with a big pinch of salt until soft.
  4. Add the ginger, garlic, turmeric and ground spices then fry for another minute.
  5. Pour in the coconut milk, tamarind and green chillies and simmer for 5 mins.
  6. Finally add the fish and cook for a further 5 – 10 mins until just cooked.
  7. Serve with brown rice and some green beans or mangetout.
