With so much being shared on the news at the moment about climate change, cost of living, and lack of particular products coming out of certain countries, we should be thinking a bit differently.
As I have said before, this is a challenge, not a crisis, we can get through it and we will, humans are resilient by our very nature.
Which brings me to yesterday – as I was out in my garden planting seeds and weeding my veg patch I picked the top 4-6 leaves of a heap of nettles and added them to my leek and potato soup – it was delicious.
The sting goes away as soon as they are cooked, and if you put them in right at the end of the cooking process you get to retain nearly all their goodness – oodles of calcium, plus magnesium, iron, potassium, vitamin B6, fibre and even some protein – it certainly boosted the nutrient content of my soup.
Why not give it a try, there’s plenty about, just don’t forget your gardening gloves for the picking!
