I tried this on my kids expecting them to hate it but they loved them. They are so easy to make and are a great way to use up your celeriac if you’ve got any knocking about without a purpose.
It comes from my favourite organic veg company cook book, Abel and Cole.

Ingredients :

  • ½ celeriac, peeled and grated
  • 1 garlic clove and/or half an onion chopped finely or grated.
  • 1 egg
  • any flour, approx 1 tbsp (or use gram or other gluten free flour)
  • herbs or spices, I used ½ tsp ground cumin, it was delicious
  • Salt and pepper to taste
  • oil for cooking

Instructions :

  1. Mix all the ingredients in a bowl with enough flour to bind it together.
  2. Put a frying pan on the heat with a small amount of oil.
  3. Put a spoonful of the mix into the pan and flatten down, you can probably fit 3 or 4 in the pan, cook until golden brown.
  4. Flip over and cook the other side, then serve. It is great as a side dish to practically anything.
