This is a bit like a large, deep pancake. It is so lovely as the blueberries burst in your mouth when you eat them. It can be made with any milk, we often use rice milk for pancakes and it works just as well in this too.

Helathyish Puddings
Ingredients :
- 75g plain flour (I haven’t tried it with gluten free flour but I suspect Buckwheat flour would do the job as it is the main ingredient in blinis which are a type of pancake)
- 75g caster sugar (or Xylitol if you want to use an alternative)
- 2 large free range eggs
- 200ml milk (rice milk is a good alternative)
- few drops vanilla essence
- 150g fresh blueberries
Instructions :
- Put the flour and sugar into a bowl and make a well
- Drop the eggs into the well and gradually mix in with the milk to make a batter.
- Grease a round 20cm ovenproof dish and place in the oven at 180°C to warm up.
- Once warm, add a thin layer of batter mix to the tray and place back in the oven for 3 mins.
- Take out and immediately add blueberries and remaining batter and cook for another 30 mins until cooked through.
- Serve straight from the oven.
