This is a recipe I used to cook a lot in my student days, it is ncredibly cheap and easy to make and can be adapted into thai fishcakes, with a bit of chilli, coriander, ginger and lime or curry fishcakes with the addition of some curry powder or provençal fishcakes with the addition of some oregano and garlic but I like them simple, just as they are!

Ingredients :
- I large tin of pilchards in tomato sauce, roughly drained
- 2 medium/large potatoes, cut into cubes
- breadcrumbs, fresh or shop bought (can use gluten free bread or gluten free breadcrumbs)
- pepper to season
Instructions :
- Boil the potatoes for about 15 mins until soft and easy to mash.
- Add the pilchards to the potatoes and mashe well togeher.
- Add any seasoning you want.
- Once thoroughly combined make into about 8 balls.
- flatten and cover in breadcrumbs.
- Heat a little olive or rapeseed oil in a large frying pan and cook until fishcakes are golden, turn over and repeat.
- That’s it! How easy?! Serve with a slice of lemon, a huge salad or some steamed veg.
- Delicious.
