Ingredients :
- 2kg bramley apples
- 1.4 litres water
- approx 1.3g preserving sugar
- 3 sprigs rosemary, thyme, lavender, chilli, mint or whatever flavour you want, the choice is endless!
- 1 tbsp cider vinegar
Instructions :
- Wash, core and roughly chop apples, place in a large pan with the water, cover and bring to the boil.
- Reduce heat to a gentle simmer and cook until mushy.
- Pour contents into a muslin cloth placed in a sieve, over a large bowl or use a jelly bag. Let the juice drip through overnight.
- The next day measure the juice into a large pan and for every 600ml of liquid add 450g preserving sugar plus your chosen herbs/spices and the vinegar.
- Dissolve the sugar slowly and then bring it to a steady boil, cook until you reach jam setting point (use a jam thermometer.)
- Take the pan off the heat and remove any stalks, (if using rosemary or thyme) and any scum from the top then pour into sterilised jars.
- It will keep for a year in a cool dark cupboard
- Can also be made with crabapples if you get hold of any!
