12 Nov Free Food Anyone?
This is the perfect time of year to make use of some of nature’s amazing freebies. I am not an avid forager but there are a few things that I love to use from the great outdoors and they are usually at their best and in great abundance at this time of year.
Nettles come top of my list, they are prolific in Spring and are so good for you, they are loaded with iron and are completely pesticide free! More importantly they lose their sting when they are broken down or cooked.
Pick only the tops, cut them about 4-6 leaves down and make sure you stay away from dog walking routes! Stick some in your morning smoothie for a great tonic or make then into a nutritious and delicious Nettle Soup.
Next on my list is wild garlic, you can find this in shady, wooded areas during the bluebell season. I absolutely adore this tasty leaf in a salad, made into a Wild Garlic Pesto with walnuts and pecorino or cooked into a Leek, Potato & Wild Garlic Soup. Pick only the leaves and as with the nettles stay away from dog roaming areas.
They are easy to find as the air is pungent with the smell of garlic when they are ready for the picking.
Lastly but by no means least is elderflowers for making the most refreshing Elderflower Cordial.
It may be a bit early for the last two on my list but they won’t be far behind. Get started with the nettles though and you might just get the foraging bug!
