Every Little Helps….

You may or may not know this but I absolutely hate waste, especially food, which I love!

We throw away so much food it’s criminal, but what about the bits we throw away that we don’t even think about like veg peelings and stems? I not only detest throwing fresh veg away I also try to use up as much of the actual veg as I can.

I never peel a potato or a carrot! Apart from the fact that a lot of the goodness is situated just underneath the skin. I am lazy! Peeling veg is a bit like ironing, I only do it if I absolutely have to!

If you really must peel a potato, make the peelings thick and crisp them up in the oven, they are delicious with a bit of grated cheese on them or sprinkled with paprika and dipped in natural yoghurt.

Did you know that butternut squash* is great unpeeled and is definitely the way forward, they are tricky to peel but the skin is great and adds a different texture and substance to your meal. Give it a try next time with the Warm Spicy Squash and Parmesan Salad

Beetroot leaves, chard stems, kohl rabi leaves even those hearty green cauliflower leaves are all delicious stir fried with a bit of olive oil and garlic (add chilli if you want some heat.)

Never throw away a broccoli stalk, steam them with the florets or chop them small and throw into a risotto or Hidden Veg Bolognese.

Any other veg that is in danger of heading to the bin, just bung in a soup or a smoothie, after all ‘Every Little Helps’ or so they say!

* Most pumpkins and squash are fine unpeeled but not the really thick skinned varieties.
